Pizzas, Focaccia, and Calzones

The importance of learning how to make one dough and have it versatile enough to turn into three different breads is the basis of this class. At the beginning of class, Kathy will show you how to shape pizza and then share tricks for a crispy, but chewy crust. Next, she will take the same dough and form a Spinach Ricotta Calzone. After each of these demonstrations, you will be sampling them. The last is the Focaccia which will be dressed with caramelized onions and basil. This will be served with a salad of fresh greens and Gervasi dressing. Finally, Kathy will demonstrate how to make the dough which you will make with a partner. Please bring a medium size bowl for your dough.
