Let's stroll along cobblestone streets of Madrid where the tapas bars are always doing a brisk business. Tapas and wine are part of the culinary culture of this fascinating country and we will be preparing some of the most popular dishes that are found on the extensive menus that the bars usually have. We will be making the iconic Tortilla Espanola (Spanish Potato Omelette), the ever popular Gambas al Ajillo (Garlicky Sauteed Shrimp). Frituras de Coliflor (Cauliflower Fritters), Traditional Mussels (Mejillones Criollos), Patatas Bravas con Mayonesa Ahumada (Fingerling Potatoes with a Smoky Aioli), Empanadas de Picadillo (Cumin Spiced Beef Empanadas) and Pinchos Morunos (Moroccan Spiced Pork Tenderloin Skewers). You will walk away from this class with a new appreciation for the small plates of Spain that you can share with friends and family!
