Chef Kathy, pizza expert extraordinaire, will instruct on the authentic way to make Naples’ pizza’s close cousins:
Montenara – small circular pieces of dough pierced with a fork and baked. When cooled, they are topped with tomatoes, mozzarella, basil, Parmesan cheese, and drizzled with olive oil. A Napoletano Calzone – pizza dough folded and filled with ricotta, mozzarella, Italian ham, Parmesan, and basil, and topped with fresh tomato sauce and more basil after baking or deep frying. Angelettos (Little Angels) – strips of dough are deep fried and topped with a spicy marinara sauce and Parmesan to make a tasty snack or appetizer. Some of the Angelettos will be held back to make Angelettos Nutella. Yes, they are drizzled with Nutella and dusted with powdered sugar for a mouthwatering dessert!
